poultry essentials: awesome dipping sauce
One of the advantages of being a closet insomniac is that you get to spend all night in the kitchen playing mad scientist. I call this a poultry dipping sauce; however, you could probably use it with fish. I do not think it would work with beef or pork. In addition, it is assembled with ingredients that you likely have available in your cupboards, and fridge. So, you ready… Let’s get into the kitchen.

- MAIN INGREDIENTS
- 1 cup mayonnaise, plain variety, i prefer duke’s
- 1 - 2 tablespoons water, filtered, if you have it
- 1 tablespoon ketchup
- 1 tablespoon fresh clover honey
- 1 tablespoon rice vinegar, unseasoned
- 1 teaspoon sweet paprika
- 1/8 teaspoon garlic powder, or 1 clove of baked garlic
- 1 - 2 pinches cayenne pepper, or to taste
- ADDITIONAL ITEMS
- salt, kosher variety, to taste
- white pepper, freshly ground, to taste
- frank’s hot sauce, to taste

Step 2Sweet versus Smoked Paprika There are many varieties of paprika, but the one that I felt did not work with this dipping sauce was smoked. Do not use smoked paprika. I found that sweet worked the best.

Step 3Store Bought versus Homemade Two of the ingredients in this recipe are easy to find at the grocer, and you probably have them in your fridge or pantries: Mayonnaise and ketchup. If you have some time on your hands, you might want to try homemade. They taste better and do not have all those nasty preservatives in them. If you are using homemade condiments (no preservatives), then it will last about a week.

Step 7Add salt, white pepper, and hot sauce, to taste.

Step 8Cover and let rest overnight in the fridge before using.
