pearlie mae's hummus

Very good on celery also. This keeps well so you may want to double the recipe. I first tasted this when Pearl brought it during my pneumonia recuperation in May 2006.

Ingredients

  • 3 - garlic cloves, minced
  • 19 ounces can chick-peas (garbanzo beans), drained, reserve 2 tbsp. juice
  • 1/4 cup tahini (sesame seed paste)
  • 3 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons garbanzo bean juice or water
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

How To Make pearlie mae's hummus

  • Step 1
    Mince garlic in food processor or blender. Add all other ingredients, process until smooth. Taste, adjust seasonings. If you do not have tahini, peanut butter makes a good substitute.
  • Step 2
    If you like spicy foods, add a bit of cayenne pepper or cajon seasoning.
  • Step 3
    Store in refrigerator in a tightly covered container.
