Sunday dinner is becoming a tradition with us, and last Sunday we decided to make Fajitas, the star of the dinner was this concoction of my eldest daughter. The freshness of Pico de Gallo the zip of salsa with enough avocado to make it...AMAZING! Now as with all my recipes the listed ingredients are "suggested". This is a mild version, you could change up the peppers or leave in the seeds for added kick. I encourage you to try and make it your own.

Ingredients For nikki's avacado salsa

    avacado mashed
  • 3 clove
    garlic mashed or finely grated
  • 3 Tbsp
    lime juice
  • 1/4 c
    cilantro, fresh
  • 5 sm
    vine ripened tomatoes diced
  • 1
    small onion diced, or half of a medium onion
  • 1
    jalapeno ribs and seeds removed diced
  • salt and pepper

How To Make nikki's avacado salsa

    Combine ingredients

    season to taste with salt and pepper

    cover with tinfoil and place in the fridge for up to an hour, any time after 30 minutes should be fine. Mix and taste. Enjoy
