Ingredients
- 2 - 16 oz cans black beans, drained
- 1 - 8 oz jar picante sauce, divided
- 1 teaspoon canola oil
- 1 - onion, finely chopped
- 1 - red bell pepper, finely chopped
- 3 teaspoons minced garlic
- 2 teaspoons ground cumin
- 3/4 teaspoon salt
- 1/2 cup reduced-fat, shredded cheddar cheese
- 1 large tomato, chopped
How To Make healthy black bean dip

Step 1In blender, combine 1 can black beans and 1/4 cup picante sauce. Blend until smooth. In lg skillet, over medium heat, Heat oil. Add onion, red bell pepper and garlic. Saute until onion is soft.

Step 2Add pureed bean mix to skillet, along w/ cumin, salt and remaining beans and picante sauce. Mix well. Bring to a boil. Reduce heat to low.

Step 3Simmer for 5 mins, stirring occasionally. Pour dip into serving bowl. Serve w/ baked tortilla chips and light sour cream
