I love foods that are reminiscent of Thai cooking, without the excess heat. This would work on a chicken breast sandwich or as a veggie dip. Thin it a bit to use as a salad dressing or marinade.

Ingredients For green fusion sauce

  • 1 md
    avocado, pitted and peeled
  • 1/2 c
    cilantro, packed
  • 1/2 c
    parsley, packed
  • 1 md
    jalapeno, seeds and ribs removed, chopped
  • 2 clove
    garlic
  • 2
    limes, juice of and zest of one
  • 1/2 c
    water
  • 1/3 c
    olive oil
  • 1 tsp
    salt (or to taste)
  • 1/2 c
    blanched almond slivers (or pistachios)
  • salt and pepper to taste

How To Make green fusion sauce

  • 1
    In bowl of a food processor, add all ingredients up to nuts. Pulse.

    Add nuts, pulse until almost smooth. Taste - add additional salt and pepper if needed.

    Serve as a dip or on sandwiches. Thin with vinegar, water or oil to use as a salad dressing or marinade.
