Fried Avocado Strips with Cilantro Ranch

FOR AVOCADO:

2avocados, peeled and sliced into 8 strips per avocado

1/4 cflour
-
1/8 tspsalt

2eggs beaten well

1/4 cpanko bread crumbs

·vegetable oil for frying

FOR CILANTRO RANCH DIPPING SAUCE
-
1/2 cbuttermilk
-
1/4 cmayonnaise
-
1/4 cplain greek yogurt
-
1/4 cfresh cilantro leaves
-
1tomatillo, husks removed, and chopped
-
1clove garlic
-
1green onion
-
·juice of 1/2 lime
-
1/8 tspcumin
-
1/4 tspsalt
-
1/4 tsppepper
-
1small jalapeno, seeds removed, leave them in if you want it spicy

OPTIONAL TOMATO RELISH: MIX EVERYTHING IN A BOWL - SERVE A COUPLE TABLESPOONS ON PLATE WITH AVOCADOS

1/4onion, small diced

2medium tomatoes, seeded and diced

1/4poblano pepper, seeded and diced

·cilantro leaves roughly chopped to taste

1/4mango, peeled and diced

1/8 tspgarlic powder

·juice of 1/4 lime
How to Make Fried Avocado Strips with Cilantro Ranch
- For the dipping sauce - put all ingredients in food processor and blend. Pour in a container and refrigerate until ready to serve.
- In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.
- Meanwhile, mix flour with 1/4 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.
- Fry 2 to 3 avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.
