feta cheese dip

I got this a while ago from a grilling book. The only thing I do different is where it calls for salt, I use garlic salt.

Ingredients

  • DIP:
  • 1 cup sour cream
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic, pressed
  • 1 tablespoon red wine vinegar
  • 2 tablespoons fresh parsley, minced
  • - ground black pepper (to taste)
  • VEGETABLES: (TO BE GRILLED)
  • 1 - red pepper, cut in 1 inch squares
  • 1 - green pepper, cut in 1 inch squares
  • 2 - onions, cut in 1 inch cubes
  • 18 - cherry tomatoes
  • 18 - button mushrooms
  • 1 - zucchini, cut in 1 inch cubes
  • - salt and pepper to taste
  • 2 teaspoons dried thyme leaves

How To Make feta cheese dip

  • Step 1
    DIP:
  • Step 2
    Mix all of the ingredients for the dip in a bowl. Set in the fridge and let chill until needed.

    VEGETABLES:
  • Step 4
    Heat the grill (about 10-15 min.)
  • Step 5
    While the grill is heating up, put all of the vegetables onto skewer, alternating the veggies. (If you are using wooden skewers, be sure to soak them before grilling.)
  • Step 6
    Brush the veggies with some olive oil and add the salt and pepper.
  • Step 7
    Grill the vegetables on medium heat until done, turning the skewers as needed.
  • Step 8
    Serve the grilled vegetables straight from the grill with the Feta Cheese Dip and enjoy!
