dip essentials: awesome pizza dipping sauce

In my opinion, one of the joys of eating pizza, is taking the crusts, and dipping them into a really good sauce. Many people use ranch dressing, and although I do love a good ranch dressing, I wanted something with a bit more tang, and a bit of kick, so I came up with this. It is easy to make, and tastes awesome. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 3/4 cup mayonnaise, plain variety
  • 1/2 cup fresh buttermilk
  • 1 small dill pickle, chopped
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon dehydrated onions, crushed
  • 1 1/2 teaspoons salt, kosher variety
  • 1/4 teaspoon white pepper, freshly ground
  • 1 pinch cayenne pepper, or to taste

    PREP/PREPARE

    If you do not want to use a dill pickle, substitute about 2 tablespoons of dill relish.
  • Step 3
    I like to vary the amounts in this recipe: Sometimes more dehydrated onions, or more (or less) lemon juice. Have fun with it, and make it your own “special” dipping sauce.

    Gather your ingredients (mise en place).
  • Step 5
    Use a spice blender, or mortar and pestle, to grind up the dehydrated onions.
  • Step 6
    Add all of the ingredients to a blender, or prep bowl.
  • Step 7
    Blend until completely smooth.
  • Step 8
    Chef’s Note: Do a final tasting for proper seasoning.

    Store in the fridge, in a sealed jar, until ready to use.

    Chef’s Tip: If you let it sit overnight in the fridge, it will taste better the next day.
