crisp cucumber salsa

This recipe is from "Journey to Health with Tonya", a Facebook group. It's not only easy to make, it's healthy too...only 16 calories per 1/4 cup!!! I made this today and have it in the fridge to chill and blend flavors...pics shown are my own

Ingredients

  • 2 c. - cucumbers, peeled/seeded/finely chopped
  • 1/2 c. - roma tomatoes, chopped/seeded
  • 1/4 C. - red onion, chopped fine
  • 2 Tbsp. - minced fresh parsley (i used flatleaf)
  • 1 - jalapeno, seeded/chopped (optional)
  • 4-1/2 tsp. - cilantro, fresh minced
  • 1 - garlic clove, pressed or minced
  • 1/4 C. - sour cream (reduced fat)
  • 1-1/2 tsp. - fresh lemon juice
  • 1-1/2 tsp. - fresh lime juice
  • 1/4 tsp. - ground cumin
  • 1/4 tsp. - seasoned salt
  • - tortilla chips or pita chips

How To Make crisp cucumber salsa

  • Step 1
    In a small bowl, combine the first seven ingredients. Set aside.
  • Step 2
    In another bowl, combine sour cream, lemon and lime juice, cumin and season salt. Whisk together well; pour over ingredients in first bowl.
  • Step 3
    Serve immediately w/tortilla chips or pita chips. I put mine in the fridge to chill, covered with plastic wrap. It's possible it will separate a bit from that but just stir it up and serve.
