Lime- and jalapeno-spiced guacamole adds a kick to layers of refried beans, cheese, tomatoes and onions. Serve seasoned tortilla chips on the side.

Cojita cheese is a Mexican cheese that comes in a hard, dry form or in a moister version. This recipe uses the moister, crumbly version to add flavor to an easy, make-ahead appetizer dip.

If you can't find this cheese you may substitute with Monterey Jack.
