black bean hummus

I have friends who are not very fond of garbanzo beans, so I enjoy the challenge of finding things they do like. This one is a favorite with work group lunches, and I usually serve with my Baked Pita Triangles.

Ingredients

  • HUMMUS
  • 1 can black beans, not drained
  • 2 cloves garlic, chopped
  • 3 tablespoons olive oil or sesame tahini
  • 2 tablespoons lime juice, fresh
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 to 1/2 teaspoon sea salt, or to taste
  • 1/2 teaspoon fresh ground black pepper
  • TOPPING
  • 2/3 cup plain greek yogurt
  • 2 tablespoons snipped coriander leaves
  • 2 tablespoons finely chopped green onions
  • 1/2 teaspoon lime juice, optional

How To Make black bean hummus

  • Step 1
    Place hummus ingredients in the workbowl of a food processor. Process until very smooth. Spoon into a serving dish.
  • Step 2
    Stir together the topping ingredients. Spoon in dollops over the hummus. (Topping is optional, but we like it because it adds a fresh flavor.)
  • Step 3
