black bean hummus
I have friends who are not very fond of garbanzo beans, so I enjoy the challenge of finding things they do like. This one is a favorite with work group lunches, and I usually serve with my Baked Pita Triangles.

Ingredients
- HUMMUS
- 1 can black beans, not drained
- 2 cloves garlic, chopped
- 3 tablespoons olive oil or sesame tahini
- 2 tablespoons lime juice, fresh
- 2 tablespoons white wine vinegar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 to 1/2 teaspoon sea salt, or to taste
- 1/2 teaspoon fresh ground black pepper
- TOPPING
- 2/3 cup plain greek yogurt
- 2 tablespoons snipped coriander leaves
- 2 tablespoons finely chopped green onions
- 1/2 teaspoon lime juice, optional
How To Make black bean hummus

Step 1Place hummus ingredients in the workbowl of a food processor. Process until very smooth. Spoon into a serving dish.

Step 2Stir together the topping ingredients. Spoon in dollops over the hummus. (Topping is optional, but we like it because it adds a fresh flavor.)
