bacon-wrapped crab & chives matzo balls
I love crab balls any way you want to serve them to me. This is my twist on llan Hall {Top Chef} bacon-wrapped matzo balls. This is "Not Kosher". These lil' delites are are bursting with flavor and charisma. Cooking with Passion, sw :)

Ingredients
- 4 1/2 ounces matzo meal mix
- 10 ounces lump crab meat
- 12 slices bacon **cut in half**
- 6 tablespoons bacon fat or lard
- 4 cups chicken stock
- 4 cups water
- 4 large eggs, whisked
- 2 tablespoons fresh chives chopped
- 1 1/2 teaspoons greek seasoning
- WASABI DIPPING SAUCE
- 3 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 tablespoon wasabi paste **more or less**
- 1 tablespoon fresh chives chopped
- 1 pinch greek seasonig
How To Make bacon-wrapped crab & chives matzo balls

Step 1get your ingredients ready. combine all the dipping ingredients in a small mixing bowl, chill until ready to serve

Step 2in a medium size mixing bowl, add eggs and bacon fat & greek seasoning. mix until well blended. add matzo ball mix and whisp until all the ingredients are combined. fold in crab and chives. chill in the fridge for 30 minutes or so.

Step 3roll the mixture into lil' one inch balls

Step 4add chicken broth and water to a large pot. bring to boil. drop the matzo balls in; cover pot. simmer matzo balls for about 40 minutes **the matzo balls will triple in size**

Step 5chill down to make it easy to roll. preheat oven to 425 degrees

Step 6roll each ball with 1/2 slice of bacon. place the bacon wrapped matzo balls "seam down" on a large oven proof pan. bake for 15 minutes or until bacon is crispy

Step 7plate up and serve with dipping sauce!
