This dip has won me a couple of recipe pitch ins at work. It was liked well enough to be served in our cafeterias a few times.

Ingredients

  • 1/2 - diced red onion
  • 1 - jalapeno, seeded and diced
  • 1 tablespoon olive oil
  • 1 - avocado, peeled, seeded and diced
  • 1 cup cilantro, fresh
  • 3/4 cup crumbled feta cheese
  • 1/4 cup lemon juice
  • 3 tablespoons vegatable or olive oil
  • - salt to taste
  • - toasted bread and vegetable sticks for dipping

How To Make avocado feta dip

  • Step 1
    place the first three ingredients in a skillet and saute for 6 minutes
  • Step 2
    Puree the cooked onion and pepper with the avocado, cilantro, feta, lemon juice, remaining oil and salt in a food processor until smooth
  • Step 3
    SERVE!
