tuna & white bean salad
I had seen a similar recipe recently. I made some changes and added a few tweaks of my own. If you use tuna packed in oil, then don't use any or as much olive oil. Olives can be a mix of kalamata, black, green, etc.

Ingredients
- 6 ounces tuna (drained)
- 2 stalks celery, chopped
- 1 tablespoon red onion, minced
- 1 can white beans, rinsed and drained (15 oz)
- 1-2 teaspoon capers
- 2 tablespoons chopped olives (any kind)
- 1 tablespoon olive oil (plain, garlic or chili infused)
- 2 tablespoons fresh lemon juice
- salt, to taste
- OPTIONAL WAYS TO SERVE:
- lettuce leaves
- tomato, cored
- slivered almonds, optional
- chow mein noodles
How To Make tuna & white bean salad

Step 1Drain tuna and flake into bowl. Drain and rinse beans and add to tuna.

Step 2Mince onion, chop olives. Add to tuna.

Step 3Stir in the other ingredients. Taste for salt

Step 4Scoop each portion onto a bed of lettuce or with a tomato cut into wedges. Sprinkle with chow mein noodles or slivered almonds to serve.
