Ingredients

  • 4
    medium size tomatoes
  • 1/2 c
    celery, chopped
  • 1/4 c
    sliced green onion
  • 1 Tbsp
    lemon juice, fresh
  • 1/4 tsp
    salt
  • 1
    can tuna, drained well and flaked
  • 1/3 c
    mayonnaise
  • 2
    hard boiled eggs, chopped

How to Make Tuna Stuffed Tomatoes

Step-by-Step

  1. Cut tops off of tomatoes and dig insides and scoop out seeds and some of the tomato meat. ( need to make room for the stuffing ) Don't take too much though as you still want some of that fresh tomato as your main base.
  2. Combine the next four ingredients and add a dash of pepper. Stir in the tuna and mayonaise and eggs. Cover and chill a couple of hours. Fill the tuna cups with the mixture and enjoy!
