This is one of my favorite salads to have for lunch. Its fast and easy and I always have the ingredients to make it. Plus its really healthy!!

Ingredients

  •   2 c
    fresh baby spinach leaves
  •   1 2.6oz pkg
    chunk light tuna in water
  •  
    mayo
  •  
    chopped or thinly sliced red onion
  •  
    ranch dressing
  •  
    salt and pepper

How To Make

    Empty tuna into a bowl prepare the way you like tuna salad. you can use salt, pepper, mayo or mustard. You can even include chopped pickles or sweet relish or onions. Set aside.

    Take your fresh spinach (I like to chop mine up just because the leaves tend to be a little big) an put in the bottom of a salad bowl add the tuna salad you made top with sliced onion, salt and pepper, and ranch dressing. You may add other veggies as well I think this would be good with black olives, sliced bell peppers, or celery. Last night I added sun dried tomatoes and this also tasted wonderful. I know tomatoes would also be good. This is really a versatile recipe. Hope you enjoy!!!
