tuna and garbonza bean salad

My daughter-in-law, Melissa, and I love beans and tuna. Since we are following Weight Watchers I created this salad to fit in our meal plan. It is filling and delicious! Each serving is 6 Points Plus.

Ingredients

  • 12 ounces canned tuna, packed in water, well drained
  • 15 ounces can organic garbonza beans, drained and rinsed
  • 1/3 cup chopped red onion
  • 1/3 cup chopped red and yellow bell pepper
  • 1/3 cup reduced fat balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1/2 cup chopped italian parsley
  • - salt and pepper to taste

How To Make tuna and garbonza bean salad

  • Step 1
    Mix ingredients tuna through lemon juice. May do several hours ahead.
  • Step 2
    Just before serving add chopped patsley
