This is a great recipe for that summertime- what can I have for lunch that is cool and crisp and won't take a lot of time to make? This is it- this is it! Less than 100 cal.per serving.

Ingredients

  • 1 medium red ripe tomato, diced
  • 1 package your choice of salad greens
  • 1 small cucumber, unpeeled, diced
  • 1 medium green onion, chopped
  • 1 small apple, unpeeled sliced
  • 6 ounces can solid albacore tuna, drained and flaked
  • 1/4 cup dried cranberries or golden raisins
  • 2 tablespoons sunflower seeds, unsalted
  • 1/2 cup black beans, rinsed, or garbanzo beans, optional
  • RASPBERRY VINAIGRETTE:
  • 1/2 cup lite raspberry juice
  • 2 tablespoons cider vinegar
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange rind
  • 1/4 cup olive oil
  • 1/2 teaspoon equal sugar substitute

How To Make sing a lil' tuna - lo cal. salad

  • Step 1
    Combine ingredients in a large salad bowl and toss lightly. Serve raspberry vinaigrette on the side.
  • Step 2
    Raspberry Vinaigrette: Combine ingredients in a jar with a tight-fitting lid; shake well. Chill until ready to serve.
