Ingredients
- 1 medium red ripe tomato, diced
- 1 package your choice of salad greens
- 1 small cucumber, unpeeled, diced
- 1 medium green onion, chopped
- 1 small apple, unpeeled sliced
- 6 ounces can solid albacore tuna, drained and flaked
- 1/4 cup dried cranberries or golden raisins
- 2 tablespoons sunflower seeds, unsalted
- 1/2 cup black beans, rinsed, or garbanzo beans, optional
- RASPBERRY VINAIGRETTE:
- 1/2 cup lite raspberry juice
- 2 tablespoons cider vinegar
- 1 tablespoon orange juice
- 1/2 teaspoon grated orange rind
- 1/4 cup olive oil
- 1/2 teaspoon equal sugar substitute

Step 1Combine ingredients in a large salad bowl and toss lightly. Serve raspberry vinaigrette on the side.

Step 2Raspberry Vinaigrette: Combine ingredients in a jar with a tight-fitting lid; shake well. Chill until ready to serve.
