As always my 6 year old loves this dish. A very healthy and colorful salad.

Ingredients For salad nicoise

  • 5 oz
    tuna in water drained
  • 1 tsp
    capers rinsed and drained
  • 2 Tbsp
    sliced sicilian or kalamata olives
  • 1 c
    fresh green beans blanched
  • 1/2 c
    thinly sliced red onion
  • 1
    red bell pepper cut into rings
  • 2 lg
    hard boiled eggs sliced (preferably pickled)
  • 2 c
    chopped fresh salad greens
  • 1
    southwest style chicken breast cut into 1 inch pieces
  • 2 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    fresh lemon juice
  • 1/2 tsp
    dijon mustard
  • 1/2 clove
    garlic grated
  • 1 tsp
    lemon zest

How To Make salad nicoise

    In a small bowl combine the first 3 ingredients tuna,capers and olives.Toss gently and set aside.

    On a large plate arrange blanched green beans on edge of plate. Layer salad greens inside of green beans followed by onions and red bell pepper. Make a small hole in middle of plate. Spoon tuna mixture in the center of plate. Layer chicken and eggs in circular fashion on top of greens.

    In a small bowl add the last 5 ingredients Olive oil,lemon juice,dijon,garlic and lemon zest and whisk until emulsified. Drizzle over the salad and serve.
