This is a super simple salad I often make to have with Mexican food. My friend, Kim B is making a cookbook for her dad and wanted me to post it. You can easily add a scoop of http://www.justapinch.com/recipes/main-course/mexican/guacamole.html instead of sliced avocado. Kick it up by adding some diced jalapenos too.

Ingredients

  • 1 bunch romaine lettuce head
  • 2 medium tomatoes
  • 2 tablespoons cilantro, fresh
  • 1 - avocado
  • - salsa

    Chop the romaine, slice the tomatoes, slice the avocados. Rough chop the cilantro.
  • Step 2
    Toss and dress with fresh salsa.

    Black olives are a great addition too.
