mediterranean inspired tuna sammies
When it's just too hot to cook, this is a perfect sandwich to make. It started as a pantry/fridge cleanout and is now something I'll make again and again.

Ingredients
- 2 - 6" hoagie rolls
- 1 - 5 oz can of tuna, drained
- 2 - scallions, chopped
- 2 tablespoons mayonnaise
- 1/4 teaspoon celery salt
- 2 large eggs, hard boiled and sliced
- 1/4 cup kalamata olives sliced
- 1/3 cup artichoke hearts, chopped
- 3/4 cup baby spinach leaves
- - freshly ground pepper
How To Make mediterranean inspired tuna sammies

Step 1Toast your hoagie rolls in oven or stovetop grill.

Step 2Slather a small amount of mayo on the bread so the spinach leaves have a place to rest.

Step 3To make the tuna salad, combine the rest of the mayo, celery salt and scallions with the tuna. When it's smooth to your liking, add equal amounts to both hoagies. Now add the olives, chopped artichoke hearts and sliced egg. Sprinkle with black pepper and dig in.
