Ingredients
- 1/3 cup walnuts
- 3 cups sweet potatoes, peeled and grated
- 1 - red apple, chopped (unpeeled, cored and coarsely chopped)
- 1/2 cup celery, chopped
- 1/2 cup red seedless grapes, halved
- 1/3 cup blue cheese, crumbled (optional)
- DRESSING
- 3 tablespoons apple juice
- 2 tablespoons vegetable oil
- 1 tablespoon white wine vinegar (plus 1 teaspoon)
- 1 teaspoon sugar
- 1/2 teaspoon salt
How To Make waldorf sweet potato salad

Step 1Toast the walnuts in oven at 350 degrees until golden, about 10 minutes (watch carefully). Cool nuts. Place walnuts, sweet potatoes, apple, celery, grapes and blue cheese in a large bowl.

Step 2To make the dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.
