    walnuts
  • 3 c
    sweet potatoes, peeled and grated
  • 1
    red apple, chopped (unpeeled, cored and coarsely chopped)
  • 1/2 c
    celery, chopped
  • 1/2 c
    red seedless grapes, halved
  • 1/3 c
    blue cheese, crumbled (optional)
  • DRESSING

  • 3 Tbsp
    apple juice
  • 2 Tbsp
    vegetable oil
  • 1 Tbsp
    white wine vinegar (plus 1 teaspoon)
  • 1 tsp
    sugar
  • 1/2 tsp
    salt

How to Make Waldorf Sweet Potato Salad

Step-by-Step

  1. Toast the walnuts in oven at 350 degrees until golden, about 10 minutes (watch carefully). Cool nuts. Place walnuts, sweet potatoes, apple, celery, grapes and blue cheese in a large bowl.
  2. To make the dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.
