Ingredients

  • 1/3 cup walnuts
  • 3 cups sweet potatoes, peeled and grated
  • 1 - red apple, chopped (unpeeled, cored and coarsely chopped)
  • 1/2 cup celery, chopped
  • 1/2 cup red seedless grapes, halved
  • 1/3 cup blue cheese, crumbled (optional)
  • DRESSING
  • 3 tablespoons apple juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon white wine vinegar (plus 1 teaspoon)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

How To Make waldorf sweet potato salad

  • Step 1
    Toast the walnuts in oven at 350 degrees until golden, about 10 minutes (watch carefully). Cool nuts. Place walnuts, sweet potatoes, apple, celery, grapes and blue cheese in a large bowl.
  • Step 2
    To make the dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.
