My mom made this all the time. She never wrote down any recipes but this is my copy of her potato salad.

Ingredients

  • 5 pounds russet potatoes, peeled and cubed
  • 4 - hard boiled eggs, diced
  • 2 tablespoons onion, chopped
  • 10 - green olives, diced
  • 2 tablespoons sweet relish
  • 1 cup mayonnaise
  • 4 teaspoons prepared mustard
  • 1 teaspoon celery seed
  • 1 teaspoon salt

How To Make mama's potato salad

  • Step 1
    Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.
  • Step 2
    In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.
  • Step 3
    This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
