My mom made this all the time. She never wrote down any recipes but this is my copy of her potato salad.

  • 5 lb
    russet potatoes, peeled and cubed
  • 4
    hard boiled eggs, diced
  • 2 Tbsp
    onion, chopped
  • 10
    green olives, diced
  • 2 Tbsp
    sweet relish
  • 1 c
  • 4 tsp
    prepared mustard
  • 1 tsp
    celery seed
  • 1 tsp

How to Make Mama's Potato Salad


  1. Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.
  2. In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.
  3. This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
