mama's potato salad
My mom made this all the time. She never wrote down any recipes but this is my copy of her potato salad.

Ingredients
- 5 pounds russet potatoes, peeled and cubed
- 4 - hard boiled eggs, diced
- 2 tablespoons onion, chopped
- 10 - green olives, diced
- 2 tablespoons sweet relish
- 1 cup mayonnaise
- 4 teaspoons prepared mustard
- 1 teaspoon celery seed
- 1 teaspoon salt
How To Make mama's potato salad

Step 1Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.

Step 2In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.

Step 3This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
