Mama's Potato Salad
5 lbrusset potatoes, peeled and cubed
4hard boiled eggs, diced
2 Tbsponion, chopped
10green olives, diced
2 Tbspsweet relish
4 tspprepared mustard
1 tspcelery seed
How to Make Mama's Potato Salad
- Place potatoes in a large pot. Cover with water and boil until potatoes and just done. (about 10 minutes) DO NOT OVERCOOK. You don't want them to turn to mush.
- In a large bowl, mix all ingredients together gently. Be sure not to break up the potatoes.
- This can be eaten right away but is much better if chilled at least an hour. Refrigerate overnight for best results as the flavors will blend more.
