Tortellini Pasta Salad
1 pkgcheese tortellini
12grape or cherry tomatoes, halved
4 slicesmoked gouda
1/3 cplain greek yogurt
6 largefresh basil leaves or 12 small ones
1 Tbspolive oil
1 Tbspwhite sugar
2 Tbspwhite wine vinegar
How to Make Tortellini Pasta Salad
- Cook the tortellini per directions and then drain and spread out in a pan or cookie sheet. Stick in the fridge to cool. I used 1 package of fresh cheese tortellini from Trader Joe's. It was a smallish package.
- As the pasta cools, cut the tomatoes in half. Stack up 4 slices of smoked gouda and cut into bite sized pieces. I used 4 slices from a Trader Joe's package of smoked gouda. Use more or less depending on your preference.
- For the dressing: Place the basil leaves in a food processor or chopper, chop up, add the olive oil and process some more. Add the yogurt, mayo and vinegar. Add salt, sugar and black pepper to taste.
- Toss pasta, tomatoes, cheese and dressing together in a bowl. Return to fridge and refrigerate until dinner time. It was even better the 2nd day.
