We had a salad potluck at work and someone brought a tortellini pasta salad. It was so delicious, I decided to make a similar one but with some fresh basil to boost the flavor.

Ingredients For tortellini pasta salad

  • 1 pkg
    cheese tortellini
  • 12
    grape or cherry tomatoes, halved
  • 4 slice
    smoked gouda
  • 1/4 c
    mayo
  • 1/3 c
    plain greek yogurt
  • 6 lg
    fresh basil leaves or 12 small ones
  • 1 Tbsp
    olive oil
  • 1/4 tsp
    salt
  • 1 Tbsp
    white sugar
  • 2 Tbsp
    white wine vinegar

How To Make tortellini pasta salad

    Cook the tortellini per directions and then drain and spread out in a pan or cookie sheet. Stick in the fridge to cool. I used 1 package of fresh cheese tortellini from Trader Joe's. It was a smallish package.

    As the pasta cools, cut the tomatoes in half. Stack up 4 slices of smoked gouda and cut into bite sized pieces. I used 4 slices from a Trader Joe's package of smoked gouda. Use more or less depending on your preference.

    For the dressing: Place the basil leaves in a food processor or chopper, chop up, add the olive oil and process some more. Add the yogurt, mayo and vinegar. Add salt, sugar and black pepper to taste.

    Toss pasta, tomatoes, cheese and dressing together in a bowl. Return to fridge and refrigerate until dinner time. It was even better the 2nd day.
