mom's macaroni salad
This is a great picnic or BBQ salad. Kids like it because of the colors and cheese. You can add any veggies you like to it, I have added broccoli florets and it was delicious!

Ingredients
- 8 ounces 1- 8 oz. package of small pasta, cooked according to package directions and drained
- 1/2 pound colby or cheddar cheese, cubed in small squares
- 1 tablespoon pimento, chopped
- 1/2 - medium green pepper, diced
- 1/2 cup dill pickle relish
- 1 cup broccoli florets, cut in bite sized pieces (optional)
- 1 - large or 2 small dill pickles cut in small pieces
- 1/2 can celery, diced
- 1/4 cup olives, green with pimentos sliced
- 1/4 cup black olives, sliced
- 1/4 cup onion, finely chopped
- 2 tablespoons shredded carrots
How To Make mom's macaroni salad

Step 1Prepare macaroni according to directions on the box. Drain and set aside in a large bowl.

Step 2DRESSING: In a medium sized bowl combine for dressing: 1/4 tsp salt, 1 tsp pepper, 1 tsp sugar, 1 c lite mayo and 1/4 cup mustard, brown or yellow. Stir well.

Step 3Cut all vegetables into small cubes or bite sized pieces. Add to macaroni in large bowl. Pour dressing over macaroni and other ingredients. Stir gently. Refrigerate for at least 3 hours before serving. Store leftovers in a tightly sealed container in refrigerator.
