This salad makes a great potluck or party salad.

Ingredients

  • 3 cups cooked rice
  • 2 - 6-oz. jars marinated artichoke hearts, chopped (drain and reserve marinade)
  • 1 large tomato, seeded and chopped
  • 1/2 large cucumber, seeded and chopped (i prefer english cucumber)
  • 1 medium red onion, chopped
  • 1 cup feta cheese, crumbled
  • 1 - 2 oz. can black olives, drained and sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon lemon pepper seasoing
  • - lettuce leaves for serving

How To Make greek rice salad

  • Step 1
    Combine cooked rice and remaining ingredients in a large bowl. Cover and refrigerate for at least 1 hour prior to serving.
  • Step 2
    Just before serving, drizzle the reserved artichoke marinade over salad, toss to blend. Spoon onto a lettuce-lined salad platter.
