Ingredients
- 3 cups cooked rice
- 2 - 6-oz. jars marinated artichoke hearts, chopped (drain and reserve marinade)
- 1 large tomato, seeded and chopped
- 1/2 large cucumber, seeded and chopped (i prefer english cucumber)
- 1 medium red onion, chopped
- 1 cup feta cheese, crumbled
- 1 - 2 oz. can black olives, drained and sliced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon dried oregano
- 1/2 teaspoon lemon pepper seasoing
- - lettuce leaves for serving
How To Make greek rice salad

Step 1Combine cooked rice and remaining ingredients in a large bowl. Cover and refrigerate for at least 1 hour prior to serving.

Step 2Just before serving, drizzle the reserved artichoke marinade over salad, toss to blend. Spoon onto a lettuce-lined salad platter.
