I have some frends on special diets and everyone loves this salad.

Blue Ribbon Recipe

This is a very good pasta salad recipe for summer cookouts and will be great if you need a gluten-free option. It's a hearty pasta salad full of flavor and texture. We liked the little spice from the salami. As it's stirred, the Feta cheese covers the other ingredients. Fresh chopped basil throughout it is tasty. The dressing is just enough to coat the mixture and let all the fresh ingredients shine. If you like more of a wet pasta salad, we'd suggest doubling the dressing recipe.

Ingredients

  •   1 pkg
    gluten-free rotelli pasta
  •   1 pkg
    grape tomatoes, halved, 10 oz
  •   4 oz
    Feta cheese, crumbled
  •   1/4 lb
    deli salami, cubed
  •   bunch
    fresh basil, chopped
  •   1/2
    red pepper, chopped
  •   1 bunch
    green onions, chopped
  •   1 can(s)
    black olives, halved, 6 oz
  • DRESSING
  •   1/3 c
    olive oil
  •   3 Tbsp
    lemon juice
  •   2 clove
    garlic, minced
  •   1 1/2 tsp
    dried oregano
  •   1/2 tsp
    salt
  •   1/4 tsp
    fresh ground black pepper

How To Make

    Boil gluten-free pasta according to package directions and drain.

    In a large mixing bowl, place cooled pasta, halved tomatoes, Feta cheese, salami, chopped basil, chopped bell pepper, and halved black olives.

    Toss together.

    Add chopped green onions and toss.

    In a small bowl, whisk together dressing ingredients.

    Pour over pasta salad and toss together well. You can add artichoke hearts if desired too.
