chicken pasta salad w/ balsamic garlic dresing

Found and made a Balsamic dressing recipe, then built a pasta salad around it! Yummers

Ingredients

  • 1-1/2 pound boneless chicken breast, cut into bite-size pieces
  • 8 ounces farfalle (bow tie) pasta
  • 1 medium red onion, diced
  • 1 cup grape tomatoes, halved
  • 1 large zucchini,sliced thick, then cut into quarters or bite-size pieces
  • 6 ounces crumbled feta
  • DRESSING INGREDIENTS
  • 2 cloves garlic
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 3/4 cup olive oil.

How To Make chicken pasta salad w/ balsamic garlic dresing

  • Step 1
    In a large pot, boil salted water. Cook pasta until al dente', drain. Run pasta under cold water. Add to Large resealable Bowl. Drizzle in a little olive oil. Stir to coat, so noodles won't stick.
  • Step 2
    Using a non stick Skillet, cook chicken until no longer pink. set aside.
  • Step 3
    In a food processor or blender, add dressing ingredients, minus olive oil. Drizzle in olive oil. Blend thoroughly. Pour over noodles, toss well. Add in cut vegetables. Toss again.
  • Step 4
    CHILL 30 min. Add crumbled Feta to each individual serving bowls. Ps. You may use Cucumbers, broccoli or mushrooms, etc.
