Ingredients

  • 1
    7-oz package spaghetti noodles
  • 1 c
    roasted peanuts, coarsely chopped (divided)
  • 1 cup
    fresh orange juice
  • 2 Tbsp
    rice wine vinegar
  • 2 Tbsp
    teriyaki marinade sauce
  • 1 Tbsp
    sesame oil
  • 1/2 tsp
    fresh orange zest (grated)
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    crushed red pepper flakes
  • 1 c
    radishes, thinly sliced
  • 1
    carrot, coarsely shredded
  • 2
    green onions, sliced
  • 2 Tbsp
    fresh cilantro, chopped
  • 1
    avocado, thinly sliced

How to Make Asian Peanut and Pasta Salad

Step-by-Step

  1. Cook pasta according to package directions; drain and set aside.
  2. Process 1/2 cup peanuts, orange juice and next 6 ingredients in a blender until smooth, stopping to scrape down sides.
  3. Combine pasta, half of dressing, remaining 1/2 cup peanuts, radishes and the next 3 ingredients, gently tossing to coat. Cover and chill 30 minutes. Serve with remaining dressing and avocado slices.
