ultimate crab salad

Slightly creamy and with a bite, thanks to the chili sauce. It's definitely different, but oh so good. Serve on top of lettuce leaves or as a sandwich.

Ingredients

  • 4 large eggs
  • 1 bunch asparagus, trimmed
  • 1 - shallot, minced
  • 1/4 cup heinz chili sauce
  • 1/4 cup light mayonnaise
  • 1/4 cup minced scallion
  • 8 cups shredded romaine lettuce
  • 12 ounces real crabmeat, drained of any water and flaked

How To Make ultimate crab salad

  • Step 1
    Place eggs in a saucepan, fill w/ cold water. Bring to a simmer over medium heat. Simmer 5 mins. Add asparagus, cook 3 mins, drain. Pell and slice cooled eggs, set aside.
  • Step 2
    In bowl, whisk together shallot, chili sauce, mayonnaise and scallion. Reserve 1/2 cup. Add lettuce to remaining dressing and toss to coat.
  • Step 3
    Divide lettuce among 4 plates. Add crab to reserved dressing, stir to combine. Pile 1/2 cup crab onto each plate. Arrange some of the egg slices along w/ some asparagus around the crab.
