Ingredients
- 1/2 cup feta cheese
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 teaspoons dijon mustard
- 2 teaspoons finely chopped shallot
- - pinch of sugar
- - salt and pepper to taste
- 8 slices canadian bacon
- 8 ounces fresh baby spinach
- 8 ounces sliced mushrooms
- 2 - sliced scallions, white and green parts
How To Make spinach-bacon salad w/ feta dressing

Step 1In a cruet jar, add cheese, oil, vinegar, mustard, shallots and a pinch of sugar. Shake to combine, season w/ salt and pepper. Shake again.

Step 2In skillet, over medium heat, cook bacon until crisp, transfer to paper towels to drain. Cool. Crumble.

Step 3In lg serving bowl, toss together spinach, mushrooms, scallions and bacon. Drizzle w/ dressing, toss gently.
