Ingredients

honey
2 Tbsp
soy sauce

lime, juiced
1 Tbsp
vegetable oil **
2 tsp
sesame oil
1/2 c
seedless cucumber, peeled, chopped
1/4 c
red pepper, finely diced

scallions, finely chopped
1 lb
medium shrimp, cooked
1 c
quinoa, cooked
salt and pepper to taste
fresh cilantro and parsley
toasted sesame seeds (optional)
belgian endive (for serving)

How to Make SESAME LIME SHRIMP SALAD WITH BELGIAN ENDIVE

Step-by-Step

  • 1Mix the honey, soy, lime juice and oils in medium bowl.
  • 2Add cucumbers, peppers, scallions, quinoa, and shrimp.
    Toss to coat.
  • 3Season with salt, pepper, cilantro, parsley and sesame seeds.
    Serve in endive 'bowls'.
