This is an amazing gluten free/vegan recipe. I live with a couple people who are gluten free and also a vegan so this was a good choice. DELICIOUS!!! Don't let the ingredients steer you away from this fresh and sweet treasure :)

  • 2 Tbsp
    balsamic vinegar
  • 2 Tbsp
    freshly squeezed lemon juice
  • 1/2 c
    extra-virgin olive oil
  • ·
    sea salt and freshly ground pepper
  • 1 pt
    cherry tomatoes
  • 2
    large tomatoes
  • 3 tsp
    granulated sugar
  • 1 Tbsp
    fresh chopped tarragon
  • 4
    strawberries hulled and cut into slices
  • 1 c
    watermelon cubed and cold

How to Make Red Summer Salad


  1. Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Taste for seasoning; add salt and pepper and a teaspoon of sugar to sweeten. Set aside.
  2. Cut the cherry tomatoes in half and slice the large tomatoes into wedges. Arrange in a single layer; season with salt and pepper and sprinkle with the remaining sugar. Add the watermelon cubes, tarragon, and strawberries; toss.
  3. Divide the tomato mixture among plates. Drizzle with more dressing, and serve immediately.
