This is an amazing gluten free/vegan recipe. I live with a couple people who are gluten free and also a vegan so this was a good choice. DELICIOUS!!! Don't let the ingredients steer you away from this fresh and sweet treasure :)

Ingredients

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup extra-virgin olive oil
  • - sea salt and freshly ground pepper
  • 1 pint cherry tomatoes
  • 2 - large tomatoes
  • 3 teaspoons granulated sugar
  • 1 tablespoon fresh chopped tarragon
  • 4 - strawberries hulled and cut into slices
  • 1 cup watermelon cubed and cold

How To Make red summer salad

  • Step 1
    Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Taste for seasoning; add salt and pepper and a teaspoon of sugar to sweeten. Set aside.
  • Step 2
    Cut the cherry tomatoes in half and slice the large tomatoes into wedges. Arrange in a single layer; season with salt and pepper and sprinkle with the remaining sugar. Add the watermelon cubes, tarragon, and strawberries; toss.
  • Step 3
    Divide the tomato mixture among plates. Drizzle with more dressing, and serve immediately.
