Red Summer Salad

Ingredients

2 Tbspbalsamic vinegar

2 Tbspfreshly squeezed lemon juice

1/2 cextra-virgin olive oil

·sea salt and freshly ground pepper

1 ptcherry tomatoes
-
2large tomatoes
-
3 tspgranulated sugar
-
1 Tbspfresh chopped tarragon
-
4strawberries hulled and cut into slices
-
1 cwatermelon cubed and cold
How to Make Red Summer Salad
- Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Taste for seasoning; add salt and pepper and a teaspoon of sugar to sweeten. Set aside.
- Cut the cherry tomatoes in half and slice the large tomatoes into wedges. Arrange in a single layer; season with salt and pepper and sprinkle with the remaining sugar. Add the watermelon cubes, tarragon, and strawberries; toss.
- Divide the tomato mixture among plates. Drizzle with more dressing, and serve immediately.
