I have to admit, I'm rarely paying attention measurements when 'creating', so measurements shown are rough estimates.

  • 1 1/2 c
    rainbow spiral quinoa
  • 10-12
    multi-colored mini tomatoes/halved
  • 1/4
    small red onion, thinly sliced
  • 1-2
    red apples, thinly sliced
  • pinch
    dill seasoning
  • 1/2 tsp
    fresh minced ginger
  • 1-2 Tbsp
    italian dressing
  • 1 c
    raw garlic almond mayo
  • to taste
    sea salt
  • to taste
    cracked pepper

How to Make Rainbow Quinoa Pasta


  1. Cook quinoa pasta per package instructions, drain, set aside
  2. Prepared remaining ingredients, add to pasta, garnish with flat leaf parsley
