Rainbow Quinoa Pasta

Just experimenting with raw foods and came up with this deliciously healthy dish!! I have to admit, I'm rarely paying attention measurements when 'creating', so measurements shown are rough estimates.

Ingredients

  • 1 1/2 c
    rainbow spiral quinoa
  • 10-12
    multi-colored mini tomatoes/halved
  • 1/4
    small red onion, thinly sliced
  • 1-2
    red apples, thinly sliced
  • pinch
    dill seasoning
  • 1/2 tsp
    fresh minced ginger
  • 1-2 Tbsp
    italian dressing
  • 1 c
    raw garlic almond mayo
  • to taste
    sea salt
  • to taste
    cracked pepper

How To Make

  • 1
    Cook quinoa pasta per package instructions, drain, set aside
  • 2
    Prepared remaining ingredients, add to pasta, garnish with flat leaf parsley
