Ingredients

  • 1 box
    quinoa, cooked
  • 1 bunch
    cilantro, fresh chopped
  • 1 bunch
    green oniion chopped
  • 3 clove
    garlic
  • 2 medium
    tomatoes diced
  • 1 large
    cucumber diced
  • 1 medium
    red onion chopped
  • 1 medium
    red pepper chopped
  • DRESSING

  • 2 medium
    limes juiced about 1/4 cup
  • 1/2 c
    olive oil
  • 1/2 tsp
    celery seed
  • 1/4 c
    sugar
  • 1 tsp
    salt

How to Make Quinoa Salad

Step-by-Step

  1. cook quinoa, drain and cool.
  2. Add cilantro, green onions, red onion, garlic, and red pepper in a food processor. Pulse until chopped fine but not liquid.
  3. Add mixture to quinoa, and then stir in tomato and cucumber.
  4. Mix ingredients for dressing together. Pour over quinoa and refrigerate until cold.
