This is a lovely looking salad,but don't the looks fool you, it will, fill you UP. Just in time for Spring.

Ingredients

  • 1 can garbanzos,drained, rinsed
  • 1 - ripe tomato (chopped)
  • 1/2 - peeled english cukecumber (chopped)
  • 1/2 - red onion (chopped)
  • 1/8 cup good olive oil
  • 1 clove garlic (minced)
  • - juice from 1 lemon
  • teaspoon dill, dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • - feta cheese

How To Make garbanzo bean salad

  • Step 1
    In a medium bowl mix beans,tomato,cukes,and red onion. In a separate bowl, mix, oil, lemon juice, garlic,salt ,pepper, and dill together. Pour over bean mixture,sprinkle with Feta.
  • Step 2
    Let chill for at least a 1/2 hour before serving.
