I JUST LOVE THE BEET SALAD U SOMETIMES GET AT DINERS B4 UR MEAL ARRIVES (SOMETIMES SERVD WITH COLESLAW OR CHICK PEA SALAD....IF U GO TO THOSE GENEROUS PLACES ;) SEEMD EASY ENOUGH TO PREPARE. SO I DID....LOVE IT U could add chickpeas or COOKD pasta ;)

- 1/4 medium red onion, sliced (1/4 of it)
- 1 tablespoon basil, cut into thin strips
- 1 tablespoon apple cider vinegar

- 1/2 teaspoon salt
- 1 pinch sugar n blk pepper
