    cooked package cornbread mix
  • 1
    medium sized vidalia onion, chopped
  • 9
    slices cooked and crumbled bacon
  • 1/2 c
    sweet pickle relish
  • 4 c
    chopped tomatoes
  • 1
    red bell pepper, chopped
  • 1 c
  • 1/2 c
    sweet pickle juice

How to Make Cornbread Salad


  1. Cook cornbread according to package directions or use your own recipe. Cool cornbread and break into pieces.
  2. In a separate large bowl mix together onion, bacon, relish, tomatoes and bell pepper.
  3. In a separate bowl mix the mayonnaise and pickle juice.
  4. Layer the ingredients in a pretty glass bowl as follows: 1/2 cornbread pieces, 1/2 vegetable mixture, 1/2 mayo/juice mix. Repeat with other half of ingredients. Cover and refrigerate at least 3 hours or overnight. This blends the flavors and makes it unbelievably good! It's great for a Southern family reunion.
