Ingredients

  • 1 - cooked package cornbread mix
  • 1 - medium sized vidalia onion, chopped
  • 9 - slices cooked and crumbled bacon
  • 1/2 cup sweet pickle relish
  • 4 cups chopped tomatoes
  • 1 - red bell pepper, chopped
  • 1 cup mayonnaise
  • 1/2 cup sweet pickle juice

How To Make cornbread salad

  • Step 1
    Cook cornbread according to package directions or use your own recipe. Cool cornbread and break into pieces.
  • Step 2
    In a separate large bowl mix together onion, bacon, relish, tomatoes and bell pepper.
  • Step 3
    In a separate bowl mix the mayonnaise and pickle juice.
  • Step 4
    Layer the ingredients in a pretty glass bowl as follows: 1/2 cornbread pieces, 1/2 vegetable mixture, 1/2 mayo/juice mix. Repeat with other half of ingredients. Cover and refrigerate at least 3 hours or overnight. This blends the flavors and makes it unbelievably good! It's great for a Southern family reunion.
