asian inspired slaw
A different twist on Cole Slaw...I love it! Gets better the longer it marinates in the dressing. So, make sure you make it at least 4 hours before serving. ENJOY!

Ingredients
- 1/2 medium head, green cabbage or napa - shredded
- 2 - green onion, thinly sliced
- 1/2 medium red pepper, thin sliced or chopped
- 1 large carrot, thinly julienned
- 1 small garlic clove, minced
- 1/2 - inch, ginger root, minced
- DRESSING
- 1/8 cup soy sauce
- sugar - to taste, optional - i didn't use any
- 1/4 cup + 2 tablespoons, rice wine vinegar
- black - pepper to taste
- 1/2 cup roasted peanuts
How To Make asian inspired slaw

Step 1Mix soy and vinegar together. Set aside.

Step 2In a medium bowl, add all other ingredients ( except nuts ) pepper to taste and toss.

Step 3Pour dressing over vegetables and toss. I place it in a zip lock baggie and every so often toss it in the bag while chilling. Refrigerate for a good 4 hours. Before serving toss with roasted peanuts.
