Ingredients For veggie tostadas

  • 1 pkg
    tostada shells
  • 1 can
    vegetarian refried beans
  • 2 c
    roma tomatoes, diced
  • 1 pkg
    cheddar cheese, shredded
  • 1 pkg
    shredded lettuce
  • 2
    avocados, sliced
  • 8 oz
    sour cream, fat-free
  • 1 c
    salsa
  • 1 c
    roasted corn relish
  • ROSTED CORN RELISH
  • 1 bag
    corn kernels, frozen & steamed
  • 2
    jalapenos, fresh, seeded & diced
  • 1
    lime, juiced
  • 3 sprig
    cilantro, fresh, chopped
  • 1
    mango, diced
  • 1/2
    red onion, diced
  • 1 oz
    evoo

How To Make veggie tostadas

  • 1
    Warm a large skillet on medium heat. Add EVOO, corn, red onion, Jalapenos. Heat until edges are "roasted", set aside to cool.

    Add the rest of the corn relish ingredients to the roasted corn mxture and place in a cool spot.While the relish is cooling warm the can of refried beans per instruction on can and warm the tostada shells @ 350 for 5 mins.

    Layer your tostada. I layer mine with refried beans,avocado slices, letuuce, tomato, corn relish, cheese, sour cream and salsa but you can layer it however you want.
