Ingredients
- 1 package tostada shells
- 1 can vegetarian refried beans
- 2 cups roma tomatoes, diced
- 1 package cheddar cheese, shredded
- 1 package shredded lettuce
- 2 - avocados, sliced
- 8 ounces sour cream, fat-free
- 1 cup salsa
- 1 cup roasted corn relish
- ROSTED CORN RELISH
- 1 bag corn kernels, frozen & steamed
- 2 - jalapenos, fresh, seeded & diced
- 1 - lime, juiced
- 3 sprigs cilantro, fresh, chopped
- 1 - mango, diced
- 1/2 - red onion, diced
- 1 ounce evoo
How To Make veggie tostadas

Step 1Warm a large skillet on medium heat. Add EVOO, corn, red onion, Jalapenos. Heat until edges are "roasted", set aside to cool.

Step 2Add the rest of the corn relish ingredients to the roasted corn mxture and place in a cool spot.While the relish is cooling warm the can of refried beans per instruction on can and warm the tostada shells @ 350 for 5 mins.

Step 3Layer your tostada. I layer mine with refried beans,avocado slices, letuuce, tomato, corn relish, cheese, sour cream and salsa but you can layer it however you want.
