balsamic mediterranean style salad with oranges

This is the salad I created. I hope you enjoy it. It has Gorgonzola cheese, Capers, olives, red peppers, tomatoes, orange silces, and red onion.the sweetness of the oranges and acid from the Vinegar is delicious together. The salad is finished off with a Garlic Balsamic Vinaigrette dressing. My family loves this salad. Enjoy!

Ingredients

  • BALSAMIC DRESSING
  • 2 - cloves chopped garlic
  • 1/4 cup balsamic vinegar
  • 1 teaspoon salt
  • 4 teaspoons level teaspoons light brown sugar
  • 3/4 cup olive oil
  • SALAD
  • 3/4 pint cherry or grape tomatoes whole
  • 1/4 - of a red onion thinly sliced
  • 3/4 - of a red bell pepper thinly sliced
  • 1/2 cup calamata olives
  • 2 - juice type oranges cut and sliced. do not leave any traces of the white inner peel on orange
  • 10 ounces romaine lettuce
  • 1-2 tablespoon capers
  • 5-6 ounces gorgonzola or crumbled feta cheese

How To Make balsamic mediterranean style salad with oranges

  • Step 1
    combine all of the ingredients in a bottle to make the Balsamic vinaigrette. Shake well and refrigerate.
  • Step 2
    Slice the onion,Red bell peppers,and cut the oranges in to slices. Remove all traces of white from the inside of the peel. You want the oranges to be juicy with no peel. Measure out olives,tomatoes,Capers, and Romaine lettuce. Place all together in a bowl,or on a platter.
  • Step 3
    Shake dressing well. Sprinkle desired amount of Balsamic Vinaigrette on to salad and toss to coat. Top with Feta Cheese. and Serve!
