citrus almond salad

This is a great, quick salad that goes with lots of meals. You could add chicken (chopped fried chicken strips or grilled chicken strips) to make a complete meal.

Ingredients

  • 1 head medium romaine lettuce - washed and cleaned well
  • 1 small can mandarin oranges - drained well
  • 1 small package slivered almonds
  • 1 small bottle poppy seed dressing
  • 1/4 cup butter

How To Make citrus almond salad

  • Step 1
    Pre-heat the oven to 350 degrees.
  • Step 2
    Coat the almonds in butter and toast until brown. Watch them closely. They will overcook and burn quickly. The rule is if you smell them, they are overcooked.
  • Step 3
    Tear the lettuce into bite-sized pieces in a salad bowl.
  • Step 4
    Mix in the mandarin oranges and the almonds.
  • Step 5
    Mix until coated. Chill in the refrigerator for a little while before serving.
