Ingredients

  • 6 cups watermelon, cut into pieces
  • 1 - ripe tomato, cut into pieces
  • 2-1/22 - english cucumbers, sliced and halved
  • 1/2 - vidalia onion, thinly sliced
  • 1/2 small carton reduced fat feta cheese (1/2 c. approx.)
  • 3 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/8 teaspoon sea salt
  • 2 tablespoons fresh mint
  • 2 tablespoons cilantro

How To Make watermelon, cucumber & feta salad

  • Step 1
    Combine first 5 ingredients in a serving bowl.
  • Step 2
    Add together lime juice, oil, salt, mint, cilantro; pour over watermelon mixture.
  • Step 3
    Toss lightly. Sprinkle additional mint and feta over top, if desired. Chill to blend flavors.
