Ingredients

  • 6 cups chopped romaine lettuce
  • 3 cups quartered fresh strawberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 1/4 cup cream of coconut
  • 2 tablespoons lime juice
  • 1 tablespoon water
  • 1 tablespoon dijon style mustard
  • 1/2 teaspoon ground ginger
  • - salt
  • - ground black pepper

How To Make triple berry salad

  • Step 1
    Place lettuce in a large bowl. Top with strawberries, raspberries and blueberries. Cover and chill for 1 hour. For dressing, in a small bowl whisk together cream of coconut, lemon juice, water, mustard and ginger. Season to taste salt and pepper. Cover and chill until ready to serve. Makes 4 servings.
