Thai Pineapple Salad
1/3 colive oil or vegetable oil
2 Tbsplemon juice
1 Tbspsoy sauce
1-2 tsppacked brown sugar
1 smallpineapple, cut into chunks
1tart red apple, diced
3green onions, sliced (with tops)
1 smallbunch romaine lettuce, shredded
How to Make Thai Pineapple Salad
- Shake oil, lemon juice, soy sauce and brown sugar in tightly covered jar; set aside.
- Place pineapple chunks, apple and green onions in a medium bowl. Add the dressing and toss well.
- Place romaine in a shallow bowl, and mound the fruit mixture in the center.
