This makes a great side dish to barbecue meats or for a picnic. Recipe is from one of my old Junior League cookbooks.

11-oz. can mandarin oranges, liquid reserved
2 1/4 c
orange juice
1 1/2 tsp
ground cumin
1 box
10-oz. box couscous
3 Tbsp
olive oil
1 Tbsp
reduced-sodium soy sauce
3 Tbsp
fresh lime juice
1/4 c
fresh cilantro, chopped
2 Tbsp
fresh basil, chopped
3 Tbsp
green onions, chopped
1 1/2 tsp
fresh ginger, chopped
1 can(s)
15 1/4 oz. can pineapple tidbits, drained
1/3 c
toasted pine nuts

How to Make Orange-Pineapple Couscous


  • 1Add enough orange juice to the mandarin orange juice to make 2 1/4 cups liquid. Bring the juices and cumin to a boil in a saucepan. Remove from heat and add couscous. Cover and let stand 5 minutes. Pour into a large bowl and let cool.
  • 2Combine oil, soy sauce and lime juice. Stir into couscouls mixture. Add in mandarin oranges, cilantro, basil, green onions, ginger and pineapple. Sprinkle with pine nuts.
