cranberry apple salad

I love the color of this salad especially served in a white bowl at Christmastime! It is one of my husband's favorite dishes and will be a hit for any cranberry lover! Note: The "holly" in the center was made using 3 ARUGULA leaves and 3 whole cranberries!

Ingredients

  • 2 boxes strawberry jello
  • 1 cup boiling water (add jello to boiling water, stir & cool (do not let gel)
  • 3 medium chopped apples ( or one extra large apple) finely chopped
  • 1 pound fresh cranberries
  • 3/4 cup sugar
  • 1 cup crushed pineapple, drained
  • - pecans, in pieces or halves (optional)
  • - note: this can be made using sugar-free jello for those reducing their sugar intake!
  • EASY AS 1,2,3

How To Make cranberry apple salad

  • Step 1
    MAKE JELLO (per above) chill but DO NOT LET SET)
  • Step 2
    Place cranberries in a food processor until finely chopped. Mix in sugar with chopped cranberries
  • Step 3
    Add pineapple & apples to cranberry mixture and stir in Jello
  • Step 4
    If desired, stir in a few pecans .. if you like nuts.. I also sprinkle a few on top, too.
  • Step 5
    CHILL IN FRIDGE UNTIL SET or overnight .... and ENJOY!
