This is a light and refreshing salad that goes well with grilled chicken or pork.

Ingredients

  • 1 can black beans- rinsed and drained
  • 1 can mandarin oranges- drained
  • 1 - red bell pepper- seeded and diced
  • 1/2 - red onion- diced
  • 1/4 cup cilantro- chopped
  • 1 1/2 teaspoons olive oil or any oil you like
  • - juice of 1 small lime
  • 2-3 dashes salt

How To Make black bean and mandarin orange salad

  • Step 1
    Put all the ingredients in a medium-sized bowl. Toss gently to combine, being careful not to break up the orange segments. Keep in the refrigerator until ready to serve.
