1cold rotisserie chicken, deboned & cut in chunks
3 smallgreen onions, diced whites & greens
2 stalk(s)celery, diced
1crisp apple, peeled, cored & diced~i used fuji
1 Tbspdijon mustard
6 slicebread and butter pickles, diced
1 1/2 Tbspdill relish
1/2 tspmadras curry powder
1/4 tspgarlic powder
1 tspsalt and pepper, combined~ or to taste
1/2 clow fat mayo
1/2 clight miracle whip
How to Make Tasty Chicken Salad
- My store sells rotisserie chickens already chilled in the deli section, otherwise cool to room temp or chill before proceeding...
Remove skin from chicken & debone. Cut into bite sized chunks, & place in a large mixing bowl.
- Dice the green onions, celery, apple & pickle slices. Add to the bowl. (If you don't have b&b pickles, add 1 tsp sugar instead.)
- Add remaining ingredients to bowl & fold until well combined. Chill for about an hour to allow flavors to marry, or if you just can't wait, dig in!
- Makes 8 generous sandwiches.
