This is a great light meal, made easy by using a store bought rotisserie chicken. I put this together with what I had on the shelf, but feel free to swap out for things you have handy instead. And does the curry powder throw you off? Honestly, it gives a fullness to the flavor without being dominant. Try it! I bet you'll like it as much as we do!
1My store sells rotisserie chickens already chilled in the deli section, otherwise cool to room temp or chill before proceeding...
Remove skin from chicken & debone. Cut into bite sized chunks, & place in a large mixing bowl.
2Dice the green onions, celery, apple & pickle slices. Add to the bowl. (If you don't have b&b pickles, add 1 tsp sugar instead.)
3Add remaining ingredients to bowl & fold until well combined. Chill for about an hour to allow flavors to marry, or if you just can't wait, dig in!
