tasty chicken salad
This is a great light meal, made easy by using a store bought rotisserie chicken. I put this together with what I had on the shelf, but feel free to swap out for things you have handy instead. And does the curry powder throw you off? Honestly, it gives a fullness to the flavor without being dominant. Try it! I bet you'll like it as much as we do!

Ingredients
- 1 - cold rotisserie chicken, deboned & cut in chunks
- 3 small green onions, diced whites & greens
- 2 stalks celery, diced
- 1 - crisp apple, peeled, cored & diced~i used fuji
- 1 tablespoon dijon mustard
- 6 slices bread and butter pickles, diced
- 1 1/2 tablespoons dill relish
- 1/2 teaspoon madras curry powder
- 1/4 teaspoon garlic powder
- 1 teaspoon salt and pepper, combined~ or to taste
- 1/2 cup low fat mayo
- 1/2 cup light miracle whip

Step 1My store sells rotisserie chickens already chilled in the deli section, otherwise cool to room temp or chill before proceeding... Remove skin from chicken & debone. Cut into bite sized chunks, & place in a large mixing bowl.

Step 2Dice the green onions, celery, apple & pickle slices. Add to the bowl. (If you don't have b&b pickles, add 1 tsp sugar instead.)

Step 3Add remaining ingredients to bowl & fold until well combined. Chill for about an hour to allow flavors to marry, or if you just can't wait, dig in!

Step 4Makes 8 generous sandwiches.
