I love, love this salad! It's so easy to make and so delicious!!

Ingredients

  • 1 tablespoon olive oil
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup light ranch dressing
  • 1/2 cup light mayonnaise
  • 1 package ortega taco seasoning mix
  • 1 - stalk celery, sliced
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons chopped green onion
  • 1/2 cup reduced-fat, shredded mexican cheese
  • 10 ounces mixed greens, preferably organic

How To Make mexican ranch chicken salad

  • Step 1
    heat oil in lg skillet over med-high heat. Add chicken and cook until no longer pink. In bowl, combine dressing, mayonnaise and taco seasoning. Add to bowl, the chicken, celery, red bell pepper and green onion.
  • Step 2
    Mix untill all is cotaed. Serve over mixed greens.
