Ingredients
- 1 tablespoon olive oil
- 2 pounds boneless, skinless chicken breasts
- 1 cup light ranch dressing
- 1/2 cup light mayonnaise
- 1 package ortega taco seasoning mix
- 1 - stalk celery, sliced
- 1/4 cup chopped red bell pepper
- 2 tablespoons chopped green onion
- 1/2 cup reduced-fat, shredded mexican cheese
- 10 ounces mixed greens, preferably organic
How To Make mexican ranch chicken salad

Step 1heat oil in lg skillet over med-high heat. Add chicken and cook until no longer pink. In bowl, combine dressing, mayonnaise and taco seasoning. Add to bowl, the chicken, celery, red bell pepper and green onion.

Step 2Mix untill all is cotaed. Serve over mixed greens.
